I'd have then have to get to Nantes and back as well as transport in the city, lodging, food, and more. I'm fairly confident that I can come up with an estimate for some of the basics like flight and lodging but I want to have an idea of what I might spend on more miscellaneous things throughout the trip. Also, I'm hoping that if I can do this I can do it in a group so I'd like to know what others will be doing in Nantes.

Wow, that's pretty good pricing; you're way out in Western Canada, right?
I haven't traveled in Western Europe for a while, so the only general thing I would say is with a weak dollar, things will surely be pricey.
Probably the next thing to do is to look at some travel guides (e.g., Fodors, Lonely Planet); for instance, here's a web page for Nantes.

If you're looking for train fares Paris to Nantes, you can look at:
http://www.raileurope.com
but the fares for that season aren't up yet. Fares for Sept seem to be $70-100 US each way.
Good luck!
